Emelie Forsberg: Garden update and zucchini cookies!

Emelie here writing from a late summer in beautiful Moonvalley (Måndalen). The garden is full of different veggies - potatoes, carrots, beets, salad, onion, zucchini, pumpkin and much more!

Fruit and berries are in abundance too. We are harvesting a lot, and the favorite at the moment for my little girls is apple sauce on their breakfast porridge. Yum!

Training has been going well for me. I have been enjoying long days in the mountains, preparing for my second hundred-miler wich will be Pirin Ultra in Bulgaria in September! I´m longing to do my annual hut to hut trip in the mountains. In a few weeks I´ll do that here in Norway. Just a light backpack with a change, going as far as possible and just stopping to sleep. I love that!

Ida is currently in Chamonix, and the recovery after western (read her race report here!) has been going well. Mimmi is also in the Chamonix valley, and I know both of them are enjoying the late summer too.

Here comes a zucchini oat, chocolate cookie recipe. I needed to use some zucchini, and these turned out very yum!

Ingredients:

  • 100 g butter or coconut oil
  • 120 g zucchini
  • 100 g sugar
  • 100 g oats
  • 100 g flour (I used amaranth)
  • 80 g dark chocolate (chopped)
  • 1 tsp baking soda

Mix everything together and bake in the oven at 180°C for roughly 10 minutes!
