Emelie's Swedish Chocolate Protein Balls

Ingredients

8 dates

3 figs

2 unsulphured apricots

2 tablespoons of coconut oil

2 tablespoons of cocoa powder

1 deciliter of Moonvalleys Unflavored Protein Blend 

Cold coffee

A pinch of salt

Shredded coconut

How to

  1. Start with soaking the apricots in coffee for good flavor!
  2. Combine the soaked apricots, dates, figs, coconut oil, cocoa powder and salt in a food processor.
  3. Blend until you have a thick, smooth paste.
  4. Add the protein blend and mix until the dough is firm enough to roll easily. Add bit more if the dough is too sticky!
  5. Shape the dough into small balls.
  6. Roll each one in shredded coconut.
  7. Refrigerate for about 30 minutes.
  8. Enjoy at your favorite spot with a cup of coffee.
