Emelie's Swedish Chocolate Protein Balls

Ingredients
8 dates
3 figs
2 unsulphured apricots
2 tablespoons of coconut oil
2 tablespoons of cocoa powder
1 deciliter of Moonvalleys Unflavored Protein Blend
Cold coffee
A pinch of salt
Shredded coconut
How to
- Start with soaking the apricots in coffee for good flavor!
- Combine the soaked apricots, dates, figs, coconut oil, cocoa powder and salt in a food processor.
- Blend until you have a thick, smooth paste.
- Add the protein blend and mix until the dough is firm enough to roll easily. Add bit more if the dough is too sticky!
- Shape the dough into small balls.
- Roll each one in shredded coconut.
- Refrigerate for about 30 minutes.
- Enjoy at your favorite spot with a cup of coffee.
